Hi Guys! I love risotto and make a plain version quite often - I loved the addition of the butternut squash in this - that part was fantastic, but I thought the bacon and beef broth made it just a little too robust, dark, and salty. It came out looking like a cross between risotto and gumbo. Next time I think I'll do vegetable broth/chicken broth and 86ing the bacon, to keep it lighter in flavor so the squash and sage really shines.
